Milk fat is made up of fatty acid molecules made up of glycerol, a 3 carbon compound.
The most common type of fat is Triglyceride or Triacylglycerol.
Milk fat approximately contains 65% saturated, 30% monounsaturated, and 5% polyunsaturated fatty acids.
Fat content in milk can be determined by two methods “Analytical method” and “Commercial method.”
Analytical method of determining milk fat comprises 3 different methods viz., Rose-Gottlieb’s method, Adam’s method and Mojonnier’s method.
Commercial method comprises of Gerber method and Babcok’s method.
• Gerber method:
This method is named after Dr. Gerber, who devised this method.
Gerber method is also known as Fucoma test.
In Gerber’s method fat alone is separated from milk by subjecting the milk to digestion by the addition concentrated sulphuric acid and by the process of centrifugation, the fat is separated and measured.
